When When i first met my (now) husband, James, his son was an exceptionally picky eater. Well, he ‘s still to some extent but he’s got, through the years, come extreme measures from where he was when I met him. One approach we take to did i thought this was to offer dipping sauces which I handmade nightly just as one accompaniment to dinner. Of course this remained a crutch, it at the least got him to test the various things I ready for dinner each night.

One evening I made a decision We would make my personal favorite rendition of “Alice Springs Chicken” from Outback Steakhouse. I knew We would omit the mushrooms from his, as that could never fly, but knew that between your bacon, Colby Jack cheese and honey mustard that meal was destined as a winner. Plus it was.
At nearly $14 a serving in the restaurant for Alice Springs Chicken, we merely couldn’t manage to go there to consume often, so I brought the meal the place to find us by simply replicating the flavors I do know and love. We still serve this dish and the man still doesn’t eat the mushrooms but we need not wait with baited breath to determine if he can eat it now because we have found that that they loves it.
- 4 boneless, skinless chicken breasts, pounded to 1/2 inch in thickness (if they’re really thick it can be easier to just fillet them)

- 6 slices bacon, halved
- honey mustard (recipe below)
- 1 cup sliced, fresh mushrooms
- 2 cups shredded Colby Jack cheese (cheddar will work as a substitute)
