One celiac diagnosis later, I had sort of given up on ever eating anything lovely ever again (I like my bread y’all, and isn’t the best most comforting stuff ALWAYS bread?) so I adapted your super easy recipe to be GF vegan. Just replace the flour with a GF bread dough mix (I used Bob’s Red Mill, because it has Xanthan gum already mixed in for elasticity) I used a touch of blackstrap molasses instead of the sugar in the filling, and they are simply heavenly. This saved my life. Enjoy!
Easy Vegan Pop Tart Recipe

- 2 cups flour (I used 1 cup whole-wheat pastry, 1 cup unbleached all-purpose)
- pinch of salt
- 2/3 cup cold vegan butter (I used Earth Balance)
- 2-4 Tbsp ice cold water
- 1 heaping cup frozen mixed berries
- optional: 1 Tbsp raw sugar for topping (+ more for sweetening compote filling)
- Vanilla glaze
Tip: Aluminum foil helps keep food moist, ensures it cooks evenly, keeps leftovers fresh, and makes clean-up easy.
Serving size: 1 pop tart w/out glaze
