Recipe for Spinach Strawberry Salad with Poppyseed Dressing | This evening I threw together a different spinach salad for lunch. It’s the best spinach. Actually, when We were a daughter I ate so much of it my loved ones would often refer with me as Popeye. I was thinking if I ate enough spinach We could be as strong as Popeye which have already been very cool. Instead I remained a skinny little tomboy with many different bruises from being so active.
Even today, I often crave spinach, as I did today for lunch. So I made this refreshing salad with fresh berries that Even i did leftover from Mother’s Day.
Best Recipe for Spinach Strawberry Salad with Poppyseed Dressing
The poppy seed dressing is amazing!! We were trying to produce one that couldn’t contain milk or mayo to have it lighter. It will be perfect. Just a little tangy and sweet and SO good.
As We were preparing and eating this salad, I kept deciding on a number of differerent add-ins We could do. Crumbled feta, avocado, purple onion, grilled chicken, even bacon. But like I said, sometimes simple is the most suitable and I loved this salad as is. But I definitely is going to be using more flavors when you need it!
Ingredients for Dressing
- 1/4 cup rice vinegar (not rice wine vinegar)
- 2 tbsp. sugar
- 2 tsp poppy seeds
- 1/2 tsp. dry mustard
- salt and pepper to taste
- 3/4 cup canola oil
- 6 cups baby spinach leaves
- 2 cups strawberries, hulled and sliced
- 1/4 cup thinly sliced red onion
- 1 yellow bell pepper, thinly sliced
- 1/4 cup toasted almonds
